Chicken Cutlet

There is a very good reason why the breaded chicken cutlet is a must have on menus all across the land, they’re highly enjoyable. We decided to create one with our pastured chicken breasts and sourdough breadcrumbs.

Flash fried in our own lard from Berkshire hogs, just long enough to set the crust, the meat itself is still uncooked so that when baked from frozen the result is juicy and irresistible.
