Here’s one we’re big fans of. Not sure which village in Central America these might be closest to the recipe for, but not really going for a reenactment here either. It’s masa made from nixtamalized corn, with a little spoonful of pulled pork inside, wrapped in a cornhusk and steamed. Ingredients: nixtamalized corn, lard, pork, spices.
