Meat
On a farm such as this, whose productive abilities had been declining with each successive year of arable cropping and the export of topsoil off the farm and out of the region, the most elegant way to increase the fertility of the soil is to welcome animals to live and poop here, and put their poop to good use. It’s a foundation of regenerative agriculture, and one we’ve been on board with since the get go.
Chicken
We raise chicken on what were hayfields in previous generations, moving them to new grass daily and feeding them locally grown GMO free grains. One of several positive results of this exercise is chicken of a superior nutritional quality, which both lab results and customer feedback have proven.
Pork
Burdock Grove pigs are some seriously lucky creatures indeed. They spend the summer outdoors in the long grass and breezes, and can always count on their farmers to arrive first thing in the morning with a hearty meal of locally grown GMO free grain. Their innate curiosity and intelligence is exercised, as are their muscles, exploring each new paddock, digging and sampling the diversity of plants they find. We source young Berkshire pigs from a local producer whose practices are similar to ours. The resulting pork is of exceptional quality, marbled with nutritious fat and the flavour it brings along with it. Hogs are butchered in the fall and usually remain in stock throughout the winter and spring.
